Hunting Wild Asparagus at Sardinia, Italy

During my recent stay back in Canada, I found myself reminiscing about the long walks, deep within the folds of Sardinia’s glorious green mountains where I learned to hunt wild asparagus. It’s a prickly, skinny, long and utterly wild plant, and more often than not I was left with razor-sharp cuts on my arms and hands. There was even this time I fell into the base of the asparagus plant, and well, that didn’t go to good. Cuts, scrapes, and blood up and down both legs, on the palm of my hands and even my right elbow, got into the fight, but that didn’t stop me from my yearning to sample the earth’s wild delights. Asparagus caught in Sardinia

One of my favourite pastimes while in Sardinia, and in the early part of the year, is to hunt for wild asparagus. The flavour is stronger than the store-bought asparagus and the shoot much thinner. There are many dishes I’ve created with this earthly wonder: pasta, frittata, slightly baked, lasagna, and pickled asparagus.

I’ve collected asparagus in the early spring for the last seven years and this year, sadly I won’t be hunting for wild asparagus as it doesn’t grow in abundance in Canada like in Sardinia. So, for now just the memories of those moments.

One of my favourite pastimes is hunting for wild Sardinian asparagus in the early months of the year, after the rain, and when the sun is shining. It’s like Where’s Waldo but with thin, camouflaged asparagus. It’s not easy and after sometime my eyes cross and my patience wears thin but I’m a fighter and am determined to return home with a bushel of tasty asparagus. A few days ago the sun was out and I took the opportunity to hunt for these thin shoots in the wilds of Sardinia’s bush-land.

How to Hunt for Wild Sardinian Asparagus

Three and a half years ago I went on my first asparagus hunting excursion, it was painful. I came home with squinty eyes and a headache and vowed never to do it again. But how could I allow myself not to do something, for the reward it just too good to pass up.

The first few years was like trying to find a needle in a haystack. I actually detested going out, but that waned with each new dish prepared. Now, I am a pro. Yes, a pro-asparagus hunter and I love each moment.
